Fase Olfativa: intensidad aromática muy alta, sin agitar la copa destacan las frutas negras silvestres como la mora, incluso guindas, fruta madura pero con un punto de madurez muy agradable.
Fase Gustativa: entrada potente, fresca y bastante equilibrada (acidez-azúcar-taninos y alcohol).
Maridaje: tostas elaboradas con panes de la zona. Setas y carnes de la tierra sin excesiva condimentación, quesos con una curación media. Incluso postres elaborados con chocolate con leche.
